But sometimes, we have to be thankful for the changing weather. Thanks to the super cold weather, we can appreciate the warmth of summer even more. And vice versa, right?

Anyway, instead of being down, in this cold weather, I'm going to make a Plant-Based Coffee Latte. It's my f
avorite drink, made with almonds and coffee. I soaked the almonds last night, so they're ready to be made now. (For those who want the latte recipe, click here)
By the way, did you know that nuts need to be soaked before cooking or consuming?
If you didn’t, let me explain a bit!
Before using nuts, it's best to activate them first to reduce the anti-nutrients (like enzyme inhibitors and phytic acid) so they are easier for our digestive system to absorb. This activation process also helps break down complex proteins and starches in the nuts, making them easier to digest.
This is very beneficial for those with digestive issues or sensitivities.
Moreover, reducing these anti-nutrients enhances the absorption of the good nutrients in nuts, like vitamins, minerals, and healthy fats.
So, it wouldn’t be Nonanic if I didn’t share healthy tips with detailed steps. Here's how to soak nuts. Enjoy trying it out!
ACTIVATING NUTS
1. Place the nuts in a bowl of water for soaking.
2. Soak them overnight, or if during the day, for 8 to 10 hours.
3. Remove the nuts from the soaking water.
4. Rinse with clean, running mineral water.
5. Place the nuts on a baking sheet and put them in a dehydrator or oven at the lowest temperature.
6. Once the nuts are dry, remove them from the dehydrator/oven.
7. Let them cool and store them in an airtight container, preferably glass.
8. The nuts are ready to consume.
9. Besides using a dehydrator/oven, you can also dry the soaked nuts by roasting them over low heat, stirring occasionally until dry.
