Ingredients
- 25 pandan leaves
- 10 screwpine leaves (pandan suji)
- 400 ml water
Instructions
1. Blend pandan leaves, screwpine leaves, and water together.
2. Strain the mixture.
3. Transfer to a glass jar.
4. Store in the refrigerator/chiller for 4-7 days.
5. Afterward, discard the clear liquid sediment.
6. Homemade Pandan Extract is ready to use.
Tips
1. Use mature Pandan and Suji leaves for the best results. This will yield Pandan sediment that is more aromatic and has a deep green color.
2. If there is still clear water after discarding for 4-7 days, it can be discarded periodically again. The longer the Pandan sediment sits, the thicker it will become.
3. Pandan sediment can last for 1 month in the refrigerator.
4. It is not recommended to store it in the freezer as the texture of the Pandan sediment will break and will not produce good results.
5. Pandan sediment can be used for all recipes that require Pandan paste, approximately 3-4 times the amount of Pandan paste required in the recipe. For example, if a recipe calls for 1 teaspoon of Pandan paste, use 3-4 teaspoons of Pandan sediment.
