Ingredients
- 1 stick natural agar-agar
- Water, as needed
- 1 L organic milk
- 50 gr organic cane sugar
- 50 gr raw cacao powder
- 1/4 tsp sea salt
- 50 gr 70% dark chocolate couverture, chopped
Vla Ingredients:
- 20 gr non-GMO cornstarch
- 450 mL organic milk
- 100 gr organic cane sugar
- 1/2 tsp vanilla paste
Instructions
- Soak the agar-agar stick in water until fully submerged; let it sit for at least 15 minutes or until the agar-agar becomes soft.
- In a saucepan, pour in the milk, sugar, raw cacao powder, sea salt, and the softened agar-agar pieces. Heat until it boils.
- Reduce the heat and stir continuously until the agar-agar completely dissolves.
- Add the chopped dark chocolate and stir until melted.
- Strain into pudding molds. Let cool.
- While waiting, mix a small amount of milk with the cornstarch until smooth for the vla.
- In a saucepan, heat the remaining milk and sugar until it boils.
- Add the cornstarch mixture and vanilla, stirring until it thickens.
- Remove from heat, strain the custard, and let it cool.
- Pour the custard over the set pudding.
