Ingredients
110 gr sago flour,
150 gr tapioca flour,
1 pandan leaf: Toast until lightly crisp, about 5 minutes over low heat, then cool to room temperature.
175 gr butter
100 gr fine organic sugar
1 egg yolk
20 gr pandan extract
90 gr thick coconut milk
Instructions
1. Beat butter & fine organic sugar until fluffy and pale, about 7 minutes at medium speed.
2. Add egg yolk, pandan extract, and coconut milk, mix until smooth.
3. Add sago flour & tapioca flour, mix briefly until well combined.
4. Transfer into a piping bag fitted with an open star tip.
5. Pipe small circles onto a baking sheet lined with unbleached baking paper.
6. Bake at 150°C for 20 minutes + 130°C for 35 minutes, flipping halfway through, until dry.

Make sure to toast the sago flour until it’s light. This process makes the flour drier and results in crunchier cookies.
